Holidays are here and it can be tough to balance finals, work, and healthy balanced eating. Through this high-stress-inducing time, it is important to fuel your body with food that will nurture you and your mind. It is easy to just lean towards unhealthy fast foods during this time, but we’re here to help you find easy recipes that will cost you less time.
Here is one of my favorite recipes to make when I am in a rush, or if I am looking to meal prep for the week. My favorite thing about this meal is that it takes less than 60 minutes to prepare and after a long day of studying and working the last thing I want to do is wait 3 hours to eat.
Spicy Honey Salmon Bowl
Prep time: 30 minutes
Cook time: 25 minutes
Ingredients
Sauce
1/2 cup of mayonnaise
2 tablespoon Sriracha depending on how spicy preference
1/2 teaspoon honey
1 teaspoon lemon juice
1 teaspoon sesame oil
1 pound of salmon with no skin
1 teaspoon of each:
salt
chili powder
smoked paprika
black pepper
cumin
oregano
garlic powder
A dash of cayenne
A dash of honey
olive oil
1 tablespoon unsalted butter
2 cups of white jasmine rice
Instructions
Rice
Start by cooking your rice at a 1-2 cups ratio. Since i am using 2 cups of rice, i will be using 4 cups of water. Let that cook on the side while we prepare our salmon.
Sauce
Mix all the ingredients together until it is smooth, and adjust the salt to taste. This will be a sauce for our salmon once it is cooked.
Salmon
If the salmon is not already skinned, take the time to do this step first. After it is skinned, you can either cut up the salmon into cubes or leave it as is.
Season the salmon with all your seasonings: salt, chill powder, paprika, black pepper, oregano, lemon juice, cumin, cayenne, honey, and garlic powder.
Heat a pan with olive oil on high, and wait for the oil to get hot before putting the salmon in.
Cook salmon on both sides, for a total of 7 minutes or until desired.
Serve your delicious salmon with white rice, avocado, or cucumber (optional), and drizzle it off with our sweet and spicy mayonnaise marinate.
