Tasty Tuesday: Tomato Basil Soup

Hey guys! And, happy Tasty Tuesday!


Today, we are introducing a new series with you guys: Tasty Tuesday. This series is going to be a compilation of some of our favorite recipes that help nourish our body, and in turn, help our minds and bodies flourish!


This week, we’ve talked about how important it is to eat healthy. Eating healthy has many benefits to not only your vital organs and body, but also an organ you may not be thinking about: your brain. According to AETNA, a medical insurance provider, health eating has many positive benefits for your mental health, like fewer mood fluctuations, an overall healthier outlook, and an improved ability to focus (via aetna.com). Who doesn’t want a better outlook on life?! I know I do!


One of my biggest struggles (as I’m sure many of you can relate) is eating my emotions, especially when I’m feeling sad or anxious. I’m not exactly why I turn to food (especially sweets – my weakness!), but I’ve made it a goal in life to eat better. When I eat better, I feel better. And when I feel better, I keep eating better. The cycle continues constantly… Well, until I get stuck in a rut.


Anyways, all that to say is, I’m right there with you on your journey to a more healthy mind, body and soul – which is the whole reason why Nourish & Flourish.


Without further ado, let’s get on to our recipe of the week!


The weather is starting to cool here in Georgia, which you know what that means – soup season (arguably the best season out there. Definitely not biased or anything…)! There are so many types of soups and they are all so good! However, this week, we’re starting with a cult classic: Tomato Basil Soup.


This soup is simple, yummy & easy to make! The ingredients and instructions are down below.

Ingredients:

  • 2 large cans of diced tomatoes (liquid and all!)

  • 2 cups of vegetable broth

  • 1 ½ cups of half and half

  • 2 teaspoons of olive oil

  • 1 tablespoon of garlic (you can add more or less depending on your tastes for garlic)

  • ½ cup of fresh basil, finely chopped

  • 2 teaspoons of onion powder

  • 1 teaspoon of cayenne pepper

  • 1 ½ teaspoons of red pepper flakes

  • 1 white or yellow onion, finely chopped

  • Salt and pepper to taste

  • To serve, shredded sharp cheddar (I prefer the Tillamook brand Farmstyle cut)


Instructions:

  1. Heat a large saucepan on Medium-High heat, add the 2 teaspoons of olive oil.

  2. Once heated, add your chopped onions, garlic and basil. Saute until onions are golden and soft.

  3. Add your two cans of diced tomatoes into the onion/garlic/basil mixture – do not drain! We want the liquid & all.

  4. Turn down the heat to medium – add in your vegetable broth.

  5. Next, add in your seasonings: onion powder, cayenne pepper, salt and pepper.

  6. Let simmer for 20 minutes to heat and let your flavors meld together.

  7. Turn off heat and let cool for 5 minutes.

  8. Next, add veggie mixture to a blender & blend until smooth (you can also use a hand blender!)

  9. Heat for five minutes and serve with cheese, bread, crackers or a grilled cheese!
